Today’s recipe is a reworking of popular dish, Grape Harvest noodles. This dish is popular with friends and families at the Binissalem village fiestas.
Ingredients (for 4 people)
500g of lamb stewing steak
2 vine tomatoes
1 glass of Binissalem red wine
Half a cup of sobrasada
Three tablespoons of Mallorcan virgin old oil
200g of wide noodles
Season the meat. While heating the oil in a pan, cut the lamb into pieces. Add to a pan along with a sliced onion and grated tomatoes. Once the onion has caramelized add 1 litre of water with a teaspoon of paprika and leave to cook over a low heat. If it can be cooked over embers, this will add to the flavor. When the meat is tender, add the noodles and leave to simmer until ready (no more than 10 minutes). Just before removing the pan from the hob, add the sobrasada and mix well. Leave to stand for a few minutes and remove any excess fat before serving.
